Cinco de Mayo always reminds me of getting together with good friends and enjoying great food. One of my favorite quick dishes is called Fiesta Chicken.
I love to chop up stuff and love fresh salsa, so this is a winning combo. The ingredients are simple and readily attainable at any supermarket: red, yellow, and green peppers, red onion, cucumber, cilantro, garlic, salt, black pepper, a little vinegar, and extra virgin olive oil. It is that simple.
For the chicken – either grill or bake as many breasts as you need.
Once your chicken is ready to be plated, top with the fresh salsa – fast and easy!!!
