Salad Oscar Menu 2013: Beets of the Southern Salad

You’ll go wild over our salad, Beets of the Southern Salad, our nod to Beasts of the Southern Wild.

Ingredients: 1-16 oz. can whole red beets (or golden, or both, or fresh – up to you) chopped, 3-4 oz. crumbled feta cheese (or more… you decide), 1 package fresh baby arugula, 1/2 small red onion, 1/4 cup mixed lemon & orange juices, olive oil, salt & pepper

Directions: In a large bowl, mix beets, red onion, baby arugula, salt & pepper. To make the vinaigrette, in a smaller container, add the juice, a little less than 1/4 cup olive oil, salt & pepper (if you like more dressing, increase amounts accordingly). Right before serving, add the feta cheese & vinaigrette and mix well.
